Singapore is always consistently good and as I have a gluten free diet they have always provided me with the right food, unlike one of two other airlines! In terms of a stopover destination, Singapore is the perfect place to stay one or two nights with kids and Sentosa Island is a great base to explore from. I will always fly Singapore, as economy class is actually quite roomy and the food/entertainment of high standard. The attendants are professional and helpful and they provide constant snacks through out the flight. Again this is not the case on all airlines in economy class. They also fly direct to Manchester in the UK which is far better if you are travelling to the North of the UK and Singapore airport is the most comfortable and clean airport in the World with a wide variety of shops and even a lovely roof top swimming pool.
